I was at the grocery store last week hoping to find something easy and quick to throw together for dinner. I picked up some pre-made breaded chicken and asparagus was on sale so I picked up some of that as well.
When I got home, I thought I wanted to throw something together that was a little more exciting than breaded chicken and asparagus; how boring! So I took a shot in the dark and created my own little recipe. Turns out, it was delicious! Here’s how you make it:
Start off by chopping all your veggies!
Next, start to saute the asparagus in butter (don’t forget to season with salt and pepper!). While that’s going on you can start to boil your water for the pasta.
Then add the chopped onion and garlic to the asparagus.
Then it’s time to add my two favorite ingredients: the balsamic vinegar and the red pepper flakes. At this point, your kitchen will start to smell like a dream.
Let the asparagus and onion mixture marinate on low heat for a few minutes to let the flavors blend together.
When your pasta is cooked perfectly al dente, add a big ol’ hunk of butter to it. (I never said this recipe was healthy…)
Toss in the delicious veggies with the pasta and add the white wine and (roughly) a half cup of Parmesan cheese.
This dish isn’t too heavy, but it’s full of flavor. It doesn’t take long to prepare either so it’s a perfect choice for a busy weeknight. I hope you enjoy this recipe!
For the asparagus
- 1 bunch of asparagus, cut into 1 inch pieces
- 1 tablespoon of butter
- 2 cloves of garlic, minced
- 1/2 an onion
- 1 teaspoon red pepper flakes (more or less depending on whether you like a little spice or not)
- 3 tablespoons of balsamic vinegar (use less if you want a less prominent balsamic flavor)
Saute the asparagus in the butter for a minute or two to let it soften. Then add the onion, garlic and baslamic vinegar. Saute until the onions become transparent and the asparagus is nearly cooked through.
While that’s sauteing, you can get started on the pasta…
For the pasta
- 6 oz of linguine (about half a box)
- 2-3 tablespoons of butter
- 1/2 cup shredded Parmesan cheese
- 1 cup of pasta water (put to the side in case you need to add any to thicken the pasta)
- 1/4 cup dry white wine
Once your pasta is cooked al dente, drain the pot and add in the sauteed asparagus and onions. Then toss in the butter, Parmesan cheese, white wine and the balsamic vinegar.
Let all the flavors blend in the pot for a couple minutes. (If you need to thicken the sauce, feel free to toss in a spoon full or two of the leftover pasta water.)
And voila! You can serve this pasta as a main dish, or you can use it as a side dish for chicken, shrimp or what have you.
